What is diabetes?

Diabetes mellitus is a medical disorder characterized by varying or persistent hyperglycemia (elevated blood sugar levels), especially after eating. All types of diabetes mellitus share similar symptoms and complications at advanced stages. Hyperglycemia itself can lead to dehydration and ketoacidosis. Longer-term complications include cardiovascular disease (doubled risk), chronic renal failure (it is the main cause for dialysis), retinal damage which can lead to blindness, nerve damage which can lead to erectile dysfunction (impotence), gangrene with risk of amputation of toes, feet, and even legs. The more serious complications are more common in people who have a difficult time controlling their blood sugars with medications (glycemic control).

The most important forms of diabetes are due to decreased or the complete absense of the production of insulin (diabetes mellitus type 1, the first recognized form), or decreased sensitivity of body tissues to insulin (diabetes mellitus type 2, the more common form). The former requires insulin injections, while the latter is generally managed with oral medication and only requires insulin if the tablets are ineffective.

Patient understanding and participation is vital as blood glucose levels change continuously. Treatments which return the blood sugar to normal levels can reduce or prevent development of some of the complications of diabetes. Other health problems that accelerate the damaging effects of diabetes are smoking, elevated cholesterol levels, obesity, high blood pressure, and lack of regular exercise.

Just Great
This cookbook is one of the best diabetic cookbooks around and I thank Betty Crocker for allowing us poor diabetics the priviledge of reading it. I particularly like the fact that she gives a Carbohydrate choice scale number at the top of each recipe and that at the end she gives a neutrition table for each recipe. These are extremely helpful to a new diabetic. Also the recipes are very easy to read and follow. I would recommend this book to any diabetic who wishes to cook and eat regular food instead of all the bland stuff that the doctors and neutritionists try to say that a diabetic must eat.
Practical and Educational
I am surprised by the ingredients used in this book. I always thought that as a diabetic I must avoid most carbohydrates. It is helpful to also have some medical advice included in the cookbook. Advice from people who have diabetes offers inspiration and great ideas on dealing with this chronic disease. Another great book that I suggest for all diabetics is "Cure the Incurable" by Tombak. It does contain a wealth of information on diabetes and other incurable diseases. I think it is a very good addition to Diabetes Cookbook. As the author states at his website StartHealthyLife : "Educate yourself before you medicate yourself!"
Easy cooking
I like the cookbook overall. It has mostly regular ingredients and easy to follow instructions. The things I have cooked from it have not been delicious but I am not an excellent cook so will continue trying other recipies.
Who cares about refined carbohydrates, this bookis great!
Our nutritionist says to simply watch the amount of carbs. They haven't told us to stay away from anything. My husband is a picky eater so I didn't have a lot of options until I got this cookbook! We have tried 8 of the 21 recipes my husband would eat and they have all been a hit. I have never been interested in cooking before and so I am not only learning how to cook for a diabetic but also learning how to cook. This is a must have for every diabetic but especially for a picky eater!
